Toffees with salted butter

"Nantais" cake
Muscadet wine and Nantillais
"Fleur de sel" salt flower

[ Butter sauce for fish ]

For 6 people
250 g butter
10 cl white wine (if possible Muscadet)
1 cl white wine vinegar
50 gr shallots
Salt, white pepper

Preparation (soon translated)
Épluchez et ciselez finement les échalotes, mettez-les dans une petite casserole avec le vin, le vinaigre, le sel et le poivre.
Portez à frémissement et faites cuire très lentement jusqu'à ce que le liquide soit réduit au 3/4.
Ajoutez progressivement le beurre en petits morceaux en tournant vivement pour émulsionner la sauce.
Servez aussitôt.
